Rocky Road

This treat is just perfect for using up all those chocolate Easter eggs. And with no baking involved it’s a yummy and fun activity that the grandkids can help you make too!

Ingredients

  • 100g (4oz) unsalted butter
  • 250g (8oz) plain/milk chocolate, broken into pieces
  • 4 tablespoons Lyles Golden Syrup
  • 2 tablespoons double cream
  • 2tbsp cocoa powder
  • 2tbsp caster/light brown sugar
  • 150g Maltesers
  • 100g white chocolate chips
  • 100g mini marshmallows
  • 225g chocolate chip biscuits or cookies, broken into pieces
  • Icing sugar to dust

Preparation method

1. Line a square cake tin or small baking tray with baking parchment.

2. In a small pan, heat the butter, plain chocolate, golden syrup, sugar, cocoa powder and stir together with a wooden spoon. Once melted, leave to cool for 10 mins.

3. In a large bowl, place the Maltesers, chocolate chips, marshmallows, broken biscuits and bind together with the melted chocolate sauce.

4. Pour into the lined tin and leave to set in the fridge for a minimum of 2 hrs.

5. Remove from tin and slice into snack-sized rocky road bars.

5. Dust with icing sugar to serve.

Banana and Peanut Butter Muffins

Ingredients

  • 200g (7oz) self-raising flour
  • 25g (1oz) oats
  • 75g (2½oz) light brown muscovado sugar
  • 3 medium ripe bananas
  • 100g (3½oz) crunchy peanut butter
  • 2 medium eggs, lightly beaten
  • 25g (1oz) melted butter
  • 125ml (4fl oz) semi-skimmed Milk

Preparation method

1. Preheat the oven to 200oC/400oF/Gas Mark 6. Line a 12-hole muffin tin with muffin cases.

2. In a mixing bowl, sift the flour and mix in the oats and sugar. In a separate bowl, mash the banana and mix in the peanut butter, eggs, butter and milk. Once blended, stir into the flour mixture.

3. Spoon this into the muffin cases and bake for 20 minutes, or until golden.

4. Leave to cool completely on a wire rack before serving.

Top tip: These can be frozen and defrosted when required – and at under 200 calories they’re a guilt-free instant breakfast to see you through the winter mornings!
